| Smoked Salmon and Caper Pasta |
| 1/2 sweet onion, diced |
| 3 cloves garlic, minced |
| 3 Tbs. olive oil |
| 1 lb sliced crimini mushrooms |
| 1 lb grape tomatoes, halved |
| 1 lb pasta |
| 4 oz. smoked salmon, thinly sliced |
| 2 Tbsp. capers |
| 1/2 c. heavy cream |
| 1/2 c. white wine |
| 1 bunch green onions, chopped |
| optional: fresh chopped parsley |
| optional: parmesan cheese |
Boil salted water and cook pasta to desired tenderness.
In a very large pot (large enough to add pasta to the sauce) saute onion and garlic in olive oil, until it is translucent, but not browning. Add green onions, mushrooms, capers, cream, and wine, and heat for 3 minutes. Add smoked salmon and tomatoes to the mix, stir and remove from heat.
Drain water from pasta, and add pasta to sauce. Mix well. Garnish with parsley and parmesan if desired. Serve and enjoy!
