Kidney Bean Chili
2 one-lb. can kidney beans, drained
1/4 c. chili powder
1 c. beer
1-2 c. diced leftover meat
1 can Rotel tomatoes
1 pkg. Vigo yellow rice
Toppings

Notes: can add chipotle peppers in adobo sauce for more heat and flavor. Avocado slices are an excellent accompaniment.

Cook everything together until heated through and server over rice.
