1. Microwave potatoes 6-10 min. until tender. Let potatoes cool and dice.
2. In medium saucepan heat oil, cumin, and mustard seeds until seeds begin to pop heavily. Simmer onion at low heat until clear.
3. Add potatoes, cook until outside browns.
4. Add garbanzo beans, tomatoes, and chana masala. Simmer until hot, stirring occasionally.
5. Add garam masala, cilantro, and red pepper if desired. Stir and simmer a few minutes.
6. Serve with bread or rice.
