| Marinade |
| 1/3c olive oil |
| 1/2c cilantro |
| 1 lemon |
| 2 cloves garlic |
| 1.5 tsp chili powder |
| 2 tbsp. white wine |
| White Sauce |
| 1/3c mayo |
| 1/3c plain yogurt |
| 1 tsp. lemon or lime juice |
| 1/2 tsp. chipotle hot sauce |
| Tacos |
| corn/flour tortillas |
| white fish, frozen or fresh |
| diced tomato |
| cole slaw or shredded cabbage |
| chopped cilantro |
| lime wedges |
- Mince garlic. Zest lemon and chop in with cilantro and garlic. Add to juice from lemon, olive oil, and wine.
- Add marinade to fish (thaw first in warm water), let sit at least 20 min.
- Mix sauce ingredients
- Cook fish in pan on med heat for a few minutes each side, until just done (flakes easily)
- Assemble tacos with fish, cole slaw tossed with sauce, diced tomatos and cilantro to taste, and a lime wedge
