Apple Walnut Blue Cheese Coleslaw
1 small head purple cabbage
3 granny smith apples, peeled
1 cup crumbled blue cheese (6 oz?)
1 c. mayo
1/2 c. fresh chopped parsley
1/2 c. toasted walnut pieces
1 tbsp. vinegar (apple cider)
1 shallot, cut very thin
dash sugar
Salt and freshly ground pepper

  1. Shred cabbage and apples. Combine other ingredients. Not much salt is necessary as the blue cheese is quite salty. Be generous with black pepper. Sugar to taste.
